EAT: MUSHROOM STROGANOFF
CAMPING COMFORT FOOD, mmm
My first stab at writing up a recipe for cooking while camping
here we go…
MUSHROOM STROGANOFF
serves two hungry adults
takes about 20 minutes start to finish
INGREDIENTS (roughly, I kinda just eyeball it)
3 T butter (I use ‘melt’, butter substitute)
1 Large white onion, chopped
1 LB of mushrooms, sliced
1 1/2 C vegetable broth
3/4 C sour cream (I use tofutti sour cream substitute)
3 T flour
1/4 C chopped parsley, if you have it. I never do.
8 ounces of egg noodle (I used whole wheat penne because it’s what I had on hand)
TOOLS

pan- nonstick will make your life easier

bowl/plate or whatever you choose to eat off of
tupperware for leftovers
DIRECTIONS
Bring a large pot of water to boil, toss in the noods and cook them to al dente. Took me about 7 minutes. Drain the noodles. I just tip the pan over and use the lid to catch the noodles because I don’t always pack a strainer.
While the noods are cookin’ melt your butter in the skillet. Add the chopped onion and stir them around until they become a bit translucent. Add the shroomies and stir em all together for a few more minutes, maybe like 5, until the shroomies are limp. Pop that mixture in a bowl and set aside out of reach of hungry dogs.
in that same skillet, pop in your veggie broth and use your stirring thing (a wooden spoon is nice for this) to scrape off brown bits from the bottom of the skillet. Watch as the broth magically reduces Downey about 1/3.
Add in your flour and sour cream- turn the heat to lowww- and mix everything up really well, so there are no clumps. I used the flimsiest little spork and was successful. I believe in you, you can do this.
Add you onion and mushroom mixture to the skillet, add salt and pepper if you’re into seasoning, add the parsley if you brought it, add the noodles to complete the meal
Serve on a plate or bowl or eat out of the skillet or whatever makes you feel good.
